Masala Curry Potatoes

Ingredients

  • 350g Waxy potatoes
  • 400g Can of Chopped Tomatoes
  • 1 Red Chilli finely chopped
  • 1 tsp Ground Coriander
  • 1 tsp Cumin Seeds
  • 1 Chopped Onion
  • 2 tbsp Fresh Coriander - Chopped

Method

  • Wash the potatoes and cut into 2cm cubes
  • Heat 1 tbsp oil in a saucepan and add the cumin and ground coriander and onion.
  • Fry for 5 minutes.
  • Add the chilli and potatoes and season well.
  • Add 200ml water, cover and cook for 8 minutes.
  • Add the tinned tomatoes and cook uncovered for a further 5-7 minutes or until tender.
  • Stir in the fresh coriander just before serving.
