Potato and feta garlic bake

Ingredients

  • 800g New Potatoes cut into small chunks
  • 250g Cherry Tomatoes
  • 125g Feta Cheese (cut into chunks)
  • 2 Garlic Cloves (crushed)
  • 1 tbsp Olive Oil
  • 50g Pine Nuts

Method

  • Place the sliced new potatoes, onion, crushed garlic and tinned tomatoes in a roasting tray.
  • Add the oil and toss well.
  • Put in the oven for 25 minutes, turning once during cooking.
  • Take the tray out of the oven and add the chopped feta and pine nuts (if using).
  • Put back in the oven for a further 5 minutes or until the potatoes are tender and the Feta has melted
  • Season to taste.
  • Serve hot.
