Creamy, Sunny Potato Salad

Ingredients

  • 500g New potatoes scrubbed and halved
  • 1 tbsp Low Fat Mayonnaise
  • 1 tbsp Half Fat Creme Fraiche
  • 1 Red Onion finely chopped
  • 2 tbsp Freshly chopped Chives
  • 1 tsp Lemon Juice Seasoning to taste

Method

  • Add the new potatoes to a pan of boiling water (add salt to taste if you'd prefer).
  • Cover the pan and simmer for 15 minutes or at least until tender.
  • Drain the contents of the pan and allow to cool.
  • Add the remaining ingredients to a bowl and mix together
