Summer New Potato Salad with Mustard Dressing

Ingredients

  • 500g New Potatoes Scrubbed and Halved
  • 1 tbsp Wholegrain Mustard
  • 4 Spring Onions - finely sliced
  • 1 tbsp Clear Honey
  • 2 tbsp Olive Oil
  • 1 tbsp White Wine Vinegar
  • 1 tbsp Low-Fat Mayonnaise

Method

  • Add the new potatoes to a pan of lightly salted boiling water.
  • Cover and simmer for 15 minutes or until tender.
  • Drain and return the potatoes to the pan.
  • Mix the rest of the ingredients together and stir in with the potatoes.
  • Allow to cool slightly then season to taste and serve warm.
